В ході виконання проекту було проведено маркетингове дослідження споживання напівфабрикатів із рослинного м’яса. В ході роботи виявлено, що рослинне м’ясо досить популярна серед населення, такого як вегани та вегетаріанці, і їх кількість зростає з кожним днем. В рамках кваліфікаційної роботи запропоновано розробку нових рецептур виробництва напівфабрикатів рослинного походження, а також їх технологічний процес виробництва. Вибрано та обґрунтовано основний асортимент рослинного м’яса, розраховано витрати основної сировини та допоміжних матеріалів, здійснено підбір технологічного устаткування та спроектовано технологічну лінію з виробництва напівфабрикатів із рослинного м’яса. Розроблено проект системи НАССР в якій виявлено критичні точки контролю. Результати досліджень пройшли апробацію у виробничих умовах та в умовах освітнього процесу. Опубліковано тези доповіді на всеукраїнській науково-практичній конференції здобувачів вищої освіти і молодих учених та молодіжній науковій лізі The bachelor's qualification work is devoted to the development of technology for creating alternative types of meat products for the vegan food segment and the project of a technological line for the production of semi-finished products with a capacity of 10 tons per shift. During the implementation of the project, a marketing study of the consumption of semi-finished plant-based meat was conducted. During the work, it was found that plant-based meat is quite popular among the population, such as vegans and vegetarians, and their number is increasing every day. As part of the qualification work, it is proposed to develop new recipes for the production of semi-finished products of plant origin, as well as their technological production process. The main assortment of vegetable meat was selected and substantiated, the costs of the main raw materials and auxiliary materials were calculated, the selection of technological equipment was carried out, and the technological line for the production of semi-finished products from vegetable meat was designed. A project of the HACCP system was developed, in which critical control points were identified. The research results were tested in production conditions and in the conditions of the educational process.
