Наведено характеристику методів оцінки якості послуг та якості обслуговування споживачів у сфері гостинності. Проведено аналіз моделей та систем управління сервісним процесом у готельно-ресторанних господарствах в умовах сучасного українського ринку. Надано характеристику готелю «City Club 4*». Досліджено стану сервісного процесу у готельно-ресторанному господарстві «CITY CLUB 4*». Запропоновано напрями удосконалення сервісного процесу в готельно-ресторанному господарстві «CITY CLUB 4*» в сучасних умовах. The qualification work is devoted to the study of theoretical foundations and development of practical recommendations on the areas of improvement of the service process in the hotel and restaurant business in the conditions of modern market relations. The qualification work presents the theoretical and methodological foundations of quality management of the service process in the hotel business. The characterization of methods for assessing the quality of services and the quality of customer service in the hospitality industry is given. An analysis of models and systems for managing the service process in hotel and restaurant enterprises in the conditions of the modern Ukrainian market is carried out. A characterization of the hotel “City Club 4*” is given. The status of the service process in the hotel and restaurant business “CITY CLUB 4*” is researched.
