На сьогодні невеликі затишні заклади за ціновою позицією близькі до фаст-фудів. Це сприяє тому, що українці із середнім рівнем доходів, переситившись фаст-фудами, поступово перейдуть в ресторани середнього рівня, які пропонують домашню кухню і високий рівень обслуговування. Популярність національних кухонь невпинно зростає, що приводить до активного розвитку етнічних закладів. Конкуренція в галузі викликає необхідність пошуку нових не традиційних форматів обслуговування. На підставі проведених досліджень ринку ресторанного господарства було обґрунтовано доцільність проектування комплексного закладу у складі ресторану національних кухонь «Free flow» із кафе самообслуговування та залом fast food. На підставі обстеження аналогічних діючих ЗРГ обґрунтовано потужність та місце будівництва закладу, здійснено аналіз підприємств-конкурентів; розглянуто можливі ризики проекту та заходи їх попередження. SWOT-аналіз показав, що заклад має ресурси для успішного функціонування на ринку за рахунок специфіка закладу. Розроблено базисно-проектну технологічну програму закладу, відповідно до технологічного процесу підібрано устаткування та розраховано площі виробничих, складських, адміністративно-побутових та технічних приміщень. Визначено основні об'ємно-планувальні рішення закладу. Здійснено просторове зонування будівлі на процесні зони обслуговування, виробничу зону та зону складських приміщень, а також адміністративно-побутових та технічних приміщень. Здійснено експертизу якості проекту. Виконано оцінку рішень прийнятих у роботі за критеріями ефективності. The work examines modern directions of development of the restaurant industry in Ukraine. Today, small cozy establishments are close to fast food in terms of price. This contributes to the fact that Ukrainians with an average level of income, fed up with fast food, will gradually switch to medium-level restaurants that offer home cooking and a high level of service. The popularity of national cuisines is constantly growing, which leads to the active development of ethnic establishments. Competition in the industry makes it necessary to find new non-traditional service formats. On the basis of the conducted researches of the restaurant market, the feasibility of designing a complex establishment as part of the restaurant of national cuisines "Free flow" with a self-service cafe and a fast food hall was substantiated. On the basis of the survey of similar operating ZRG, the capacity and place of construction of the facility were substantiated, an analysis of competing enterprises was carried out; possible risks of the project and measures to prevent them are considered. The SWOT analysis showed that the institution has the resources for successful functioning on the market due to the specifics of the institution. The basic project technological program of the institution was developed, the equipment was selected in accordance with the technological process and the areas of production, warehouse, administrative and technical premises were calculated. The main volume-planning decisions of the institution have been determined. Spatial zoning of the building was carried out into process service areas, production area and warehouse area, as well as administrative, domestic, and technical premises. An examination of the quality of the project was carried out. Evaluation of the decisions made in the work was carried out according to efficiency criteria. popup.nrat_date 2025-11-21 Close
