До їх числа відносяться: вітамінізовані хлібобулочні вироби, вироби із зерна, що диспергує, вироби з біологічно активними добавками і йодовані вироби. Вироби для лікувального харчування на території країни практично не робляться. Метою дипломної роботи було дослідження споживних властивостей, виробництва, асортименту та якості дієтичних хлібобулочних виробів, що реалізуються в роздрібній мережі м. Житомир. В роботі розглянуто наступні питання: провести аналіз стану та перспектив розвитку дієтичних хлібобулочних виробів; розглянути хімічний склад дієтичних хлібобулочних виробів; розглянути чинники формують якість дієтичних хлібобулочних виробів; розглянути чинники, що зберігають якість дієтичних хлібобулочних виробів; провести дослідження якості дієтичної хлібобулочної продукції; визначити вимоги до якості, умови зберігання, пакування. маркування продукції; провести аналіз асортименту хлібобулочних виробів; провести аналіз споживчих переваг хлібобулочної продукції; визначити стан охорони праці та безпеки в надзвичайних ситуаціях в досліджуваному магазині. Дослідження якості показали, що досліджувані зразки продукції відповідають вимогам державних стандартів. Автором розроблена анкета для балової оцінки якості продукції. Analysis of the assortment policy of enterprises in the bakery industry shows that almost all enterprises produce products intended for preventive nutrition. These include: vitaminized bakery products, products from dispersible grain, products with biologically active additives and iodized products. Products for therapeutic nutrition arc practically not made in the country. The purpose of the thesis was to study the consumer properties, production, assortment and quality of dietary bakery products sold in the retail network of the city of Zhytomyr. The following issues were considered in the work: to analyze the state and prospects for the development of dietary bakery products; to consider the chemical composition of dietary bakery products; to consider the factors that shape the quality of dietary bakery products; to consider the factors that preserve the quality of dietary bakery products; to conduct a study of the quality of dietary bakery products; to determine the requirements for quality, storage conditions, packaging, labeling of products; to analyze the assortment of bakery products; to analyze consumer preferences for bakery products; to determine the state of labor protection and safety in emergency situations in the studied store. Quality studies showed that the studied product samples meet the requirements of state standards. The author developed a questionnaire for scoring product quality. popup.nrat_date 2025-11-05 Close
