The purpose of the work is to find out the physiological expediency of combined feeding of animals and poultry with mineral compounds of iron, copper, manganese, cobalt and zinc methionates and their effect on erythropoiesis, protein metabolism, productivity, slaughter and meat indicators, to carry out veterinary and sanitary evaluation of products and determine its biological value. Deficiency of microelements in fodder fed to bulls on the farms of Vinnytsia region was revealed. The obtained results confirm the necessity of correcting the rations of experimental cattle with deficient trace elements to eliminate their imbalance in the body. It was determined that feeding bulls and poultry with mineral additives of various origins promotes the activation of metabolic processes, which ensured more intensive growth of animals and reduced feed costs for growth. A positive effect of the studied additives on slaughter parameters and meat quality, hematological indicators was established. It has been proven that the correction of animal rations with methionates and lysinates of chelated trace elements contributes to the improvement of the physico-chemical and sanitary indicators of beef and contributes to its better storage. A new approach to conducting research based on the use of biologically active additives is proposed. Based on the results of the conducted research, an effective method of increasing the productivity of fattening bulls and improving the quality of products is proposed, which is available for use in farms for fattening young animals, ensures an increase in meat productivity and obtaining beef with better chemical properties, biological value and physicochemical composition.
