The state of war in the country determines the tendency to change the food needs of the military and the population. Ready-to-eat products, including ready-made broths, pâtés, vegetable preserves, etc., are becoming more relevant. There is also a need to balance army and hospital menus, rations of field cuisines, etc. Taking into account the current trends in the field of nutrition, the actual direction is the expansion of the range of pastes using various plant components ensuring the increase of the biological value of the product, balancing the composition by introducing functional polysaccharides. The possibility of enriching pâtés with mushrooms is of particular interest, due to the high protein content, which in fresh mushrooms reaches 7.8% by weight, and in dry mushroom powders – up to 40%. The scientific prove of this promising direction is widely presented in the works of Ukrainian and foreign researchers. However, the basic raw material in most studies is champignon mushrooms, which do not have a medicinal effect. A significant increase in the production of mushrooms of the Oyster species in Ukraine (lung oyster, oyster mushroom, king oyster mushroom), which can be processed into semi-finished products – pâtés, makes it possible to talk about industrial reserves of raw materials of medicinal species of edible mushrooms. popup.nrat_date 2024-12-09 Close
