The work is devoted to the study of the peculiarities of fermentation of raw materials of plant origin by lactic acid bacteria and yeast; screening for technologically important properties of bacteria and yeast as auxiliary sourdough and probiotic cultures; studying the diversity and interaction of industrially important bacteria and yeast in fermented products of plant and animal origin; metagenomic analysis of the diversity of lactic acid bacteria and yeasts in the intestines of humans and animals, as well as abiotic surfaces; optimization of cultivation and storage conditions to increase the biotechnological potential of promising strains of industrially important microorganisms. popup.nrat_date 2024-12-09 Close
