Research objective: to develop technologies for production of aromatized beverages by use of raw vegetative material grown in the south of Ukraine. Methods: modern analytical methods including capillary gas chromatography, those applied in the State Pharmacopoeia and in the wine industry. The results obtained enabled the development of technologies for production of aromatized beverages to be developed based on the raw vegetative material grown in the south of Ukraine without employing imported ingredients. As experiment lot of products (1400 dal) was introduced into use, allowing good quality to be achieved. Sphere of implementation: production of three brands of aromatized beverages: the dry vermouth "Magnis", the strong vermouth "Buket Kryma" (Crimea's bunch of flowers) and the strong aromatized beverage drink "Tavr" (Taurus).
