Research objective: to develop a system enabling the evaluation of bottling suitability of strong white wine materials. Methods: chemical analytical methods, colorimetry, potentiometry, gas chromatography and correlation, regression and discriminant analyses for the processing of results. A system of criteria to be used for the evaluation of bottling suitability of port- and madeira-type wine materials has been developed, the criteria including the sums and the ratios of OD of the wine materials at 320 nm and 420 nm and the ratios of the "yellowness" index of the wine materials to their levels of phenolics, aldehydes and amino nitrogen. A methodology "Determination of criteria to be used for the evaluation of bottling suitability of fortified wine materials. Part 1. Ordinary strong white wine materials. Part 2. Quality strong white wine materials" has been developed and tested under industrial conditions. The economical effect of the practical use of the system is improved quality of wines and shorter length of their maturation, making 25.4 hrn per day for thermal oxygen treatment and 2.1 thousand hrn per year for ageing.
