Research objective: to develop a new technology and equipment provision enabling profit-yelding products to be obtained. Methods: laboratory modelling and trial of processes on pilot equipment; standard methods for quantitative determination of components. Efficient modes of grape pomace extraction have been developed for the first time, using a cross hot-water design. A practical realization of the modes is the extraction installation И7-ВЭУ-6 that has passed the acceptance trials. Performance specifications pertaining to pomace processing have been elaborated and affirmed. A technology to produce a grape polyphenol concentrate, "Enoant", has been developed and an experiment lot of that preparation has been manufactured its high biological activity having been tested and confirmed by medical specialists. The new technology will enable profit-yelding products (strong beverages and the bio logically active concentrate) to be obtained at primary vinification plants and specialized enterprises.
