The main task of this scientific work consisted of investigating and developing the optimum processes of milk mixture preparation as applied to sterilized milk manufactureand hard cheese production. This results in improving the gustatory gualstses of final products and in increasing the overall production and reducing the avoidable losses of a raw material. As regards the hard cheese production it has been established that the vacuum processing allows the increase of final product yield 5-10% and essential decrease of the milk fat losses.
