The purpose of work is was development of mathematical model of dispersion of high viscosity materials and analysis of dispersed structure of paste-like materials at them rotor-pulse processing. Methods of research were analytical, method scanning electronic microscopy and X-ray-structural research; a method of electronic microscopy research and method of optical research. The mathematical model of dispersion processes has been developed. The results of the theoretical calculations have been confirmed by experimental researches of a degree of dispersion of paste-like homogeneous environments. The legitimacy of the offered model and expediency of creation of the equipment has been confirmed. The created device for manufacture of paste-like food production has been introduced at the enterprises of a food and pharmaceutical industry of Ukraine.
