An instruction concerning microbiological control of sparkling wine production has been corrected and tested under industrial conditions. A draft instruction concerning technological control of technolo-gical processes of production of grape wines, champagne (sparkling) materials and brandy materials has been developed in accordance with the grape and wine industry requirements and the State Standards. The draft instruction lays down the rules (the order) and methods to control technological processes of production of still (dry, semi-dry, semi-sweet, strong) wines and wine materials, champagne (sparkling) materials and brandy materials. 'I'he draft instruction includes conventional and new, modified measuring methodologies certified by the Institute for Vine and Wine "Magarach" and entered into the Register of measuring methodologies of the Ukrainian Center of Standardization and Methodology. All methods of control included in the draft instruction have been tested during training courses for specialists engaged in technochemical control held by the Institute "Magarach". The draft instruction has been transferred to the Trust "Krymsovkhozvinprom" as demonstrated by an affirmed Act of transfer of research products.
