To stipulate the factors which have influence on the development of microorganisms in the bottled water, to work out the complex of measures to stabilize the quality and to determine the safety criteria for consumption. It has been studied: the quality of the bottled water in Ukraine; the dynamics of development and change of microflora types in the bottled water, the physical and chemical influense on the microbiological processes,the dynamics of endotoxins formation, the effect of metabolism products on biological objects. It has been developed the methodic to reveal the preservatives in the bottled water and the complex of measures to stabilize the microbiological processes, it has been defined the safety criteria for the bottled water.
