There are investigated six fermented vegetable mixtures by technological, biochemical, organoleptic indices, and namely: cabbage, fermented with red beet; sweet pepper, fermented with couliflower; piquant fermented cabbage; stuffed cabbage; shredded fermented cabbage with carrot and sweet pepper; stuffed fermented sweet рерpег. Components: white head cabbage, couliflower, sweet pepper, carrot, parsley, parsnip, celery, horse radish, garlic, grape with addition of spices. For two best fermented compositions "Sweet pepper fermented with couliflower" and "Stuffed fermented sweet pepper" there are created projects of normative documents (Specifications od Ukraine and Technological Instructions), which were approved by the Scientific Council of the Institute and recommended for further passing and approvement in organs of the State Standard.
