The purpose of research - on the basis of the formulated analytical parameters is system to analyze the international and national normative bases in branch of safety and quality of foodstuff, to compare them by the current moment, to define the basic tendencies of development, to formulate conclusions and practical offers. Methods of research: the quantitative, semantic and comparative analysis; a method of formalization; methods of applied statistics; a method of deduction. The basic received results that degree of their novelty: 1. For the first time the modern condition of the international, national and interstate national bases in branch of the "know-how" of food production is analyzed. 2. For the first time absolute and relative analytical parameters for assessments that comparisons of a condition of the international and national normative bases are offered. 3. For the first time the basic tendencies of a modern condition of the international national and interstate normative bases and their development during the next two-three years are certain. 4. It is established the international normative documents (ND) which demand prime introduction in economy of Ukraine: four operating and two projects ND on a control system of safety of foodstuff (FSMC) of the International organization on standardization (ISO). 5. It is offered model of management of safety of foodstuff within the limits of ISO 22000:2005. 6. It is formulated practical offers on improvement of national normative base in branch of the "know-how" of foodstuff. 7. It is certain new scientific tasks on adaptation of national normative base in branch of the "know-how" of foodstuff to international. The order of realization of the basic received results: 1) to give to the interested Ukrainian technical committees of standardization (TC) which field of activity concerns "know-how" of food production; 2) to use by development of the future annual plans of the national standardization new ND or revision operating ND corresponding TC.
