The algorithm of software is developed with the specific of research process. The considered theoretical positions of the offered method and experimental approbation testify to possibility of its application for research of molecular mobility in liquid environments, first of all, in the water systems. Influence of row of technological factors (temperatures, pH, electromagnetic fields) and different additions (electrolytes, alcohols, acids, sugar) is studied on gel-inhibiting properties of polysaccharides of red algae. Results testify that it is possible to manage the process of jellification and problem of diminishing of expenses of jellification agents. It is partly possible to decide promoting gel-inhibiting ability of polysaccharides by introduction to compounding mixture of different additions. Principles of optimum process control are offered dryings, which are based on minimization of losses biologically valuable matters in food raw material. A method is based on the calculation of speeds of the proper chemical reactions from data of kinetics of temperature and moisture of material in the drying process.
