Factors which determine directions of development of refrigeration technique and technology are analyzed. Perspectives of scientific and technical researches are fast freezing of fruit and vegetable raw material, vending - business for a fast food and the systems of low potential energy in food industry. A conclusion is done about the necessity of improvement of technological processes, energy consumption, indexes of ecological safety, raw food stuffs economy and increase of safety and quality of the food products which is made with refrigeration technology. It is proved that for development and scientific ground of technologies of freezing and long storage of food products it is necessary to decide the complex of tasks which consist of development new experimental and theoretical research receptions of processes of storage at low and very low temperatures. Themathematical model of process of freezing of food stuffs is offered on the base of numeral decision of nonlinear equalization of heat conductivity with an effective heat capacity which takes into account a phase transition. For the engineering calculations of processes of heating, cooling and freezing of solids an arbitrary form is offered mathematical dynamics model of symmetric and asymmetric heat transfer, which with satisfactory to the practical aims exactness describes changing of temperature in a center of a solid.
