The algorithms are based on mathematical models developed by the named processes - respiration and transpiration processes at storage of fruits and vegetables in the gas environment, the nonlinear boundary value problem of heat conduction for irregular shape bodies. The calculation procedures of the thermophysical characteristics temperature dependences of food raw materials are developed for the numerical realization of algorithms taking into account phase transformations of water and fat (-40 С<=T<=40 C). The algorithms efficiency have been approved at heat moisture characteristics variables in time, heat transfer coefficients in the boundary conditions of boundary value problems. In the developed package also presents procedures that can predict the value of product weight loss from water evaporation, respiration, transpiration and the characteristics of the regime.
