Aim of investigations: improvement of chemical-technological evaluation of tomato varieties and hybrids, determination of selection standard parameters, creation of a mathematical, biological model of the tomato variety or hybrid, suitable for processing. Investigations of a number of economically - botanical signs of tomato varieties and hybrids determined their influence on the quality of raw materials and finished products. On the basis of the obtained results when investigating 24 tomato varieties there were distinguished universal samples and those, which are more suitable for making one or two concrete kinds of produce. There has been created a project of a biological model of the tomato variety, suitable for processing into such kinds of produce: "Natural Tomato Juice", "Bottled Tomatoes with Greens", "Salted Tomatoes". Pleiades there is determined the structure of interconnection between quality indices of finished products and characteristics of raw material, been constructed equation of dependence of some parameters of the finished produce from indices of tomato fruits and plants.
