The preparation with at least 80% of gallotannin and the mass fraction of hydroxyl groups making 15-20% of its total weight has been the most effective for the stabilization of white table wines. The modes and parameters referring to the activation of gallotannin preparations have been substantiated with a view to increase the stabilizing effect of the substance. The addition of gallotannin into the must has been found to enable both higher effectiveness of the treatment and lower doses of fining agents.
