The physico-chemical and the technological characteristics of liquid gelatin preparations have been determined depending on the degree of hydrolysis, and the principal parameters which characterize their properties have been established, such as dynamic viscosity, pH, molecular weight of protein fractions, dry matter content, ash content, proline mass concentration and sedimentation ability. Methods to evaluate liquid gelatin preparations have been developed, the variation ranges of the parameters have been determined, and the requirements for liquid gelatin preparations to be used in wine-making have been developed. Wine materials have been treated with liquid gelatin preparations under industrial conditions, and it has been found that their use enables the optimization of the treatment against colloidal clouds, leading to a longer period of stability.
