Results of research - the normative documents of Ukraine have been harmonized to the international standards of milk quality evaluation. It has been proved, that technology of bulls growing with substitution of 70% whole milk with milk replacer at 21 days of age has positively influenced beef quality. It has been recommended to use 20 exterior parameters in beef cows evaluation and calculated its optimal values. "Recommendations on quality parameters estimation in raw and heat treated milk in accordance to EU requirements" and "Recommendations on beef cows linear evaluation" have been developed and approved of SRC of the Ministry of Agricultural Policy of Ukraine.
