Two methods of immobilization of lactate oxidase on surface of commercial platinum screen-printed SensLab electrodes have been compared. It was shown that sensor with immobilized lactate oxidase by physical absorbtion in Residrol polymer is characterizing more narrow dynamic range and bigger response value compared with biosensor based on lactate oxidase immobilized by electrochemical deposition in poly(3,4-ethylenedioxythiophene). The operational stability of biosensorsoors developed was investigated. It was shown that method of immobilisation is not influencing to their stability. Analysis of lactate content in wines and must during fermentation was done. The correlation between results of amperometric lactate biosensor detection and ionic chromatography has been shown. The biosensor developed could be used in food industry for control and optimization of fermantation process and control of quality of wine.
