Information × Registration Number 0209U010592, 0107U010360 , R & D reports Title Working out the Scientifically Proved Technologies of Production and Storage of Fresh-Frozen Fruit and Vegetable Products with a Use of Cryoprotectors popup.stage_title Head Ukrainets Anatoliy, Registration Date 15-12-2009 Organization National university of food technologies popup.description2 The complex experimental and theoretical studies of efficient methods of freezing and storing the fruit and vegetable raw materials with a usage of cryoprotectors allowed obtaining the following results and make the following conclusions: there was confirmed the biochemical and structure-mechanical changes in freezing and thawing the plant raw objects with presence of cryoconservants in the conditions of different thawing velocity; there were widened the theoretical notions of cryoconservants' importance as the natural environment for catalytic proteins, polysaccharides and other high polymers, mineral components etc., which would essentially increase their stability in freezing and thawing conditions; there was recommended the choice of fruit and vegetables expedient for freezing, high-term storage and reparation; there were developed the methods of defrosting the frozen raw material with minimal loss of biocomponents; there were studied the biochemical changes in main components (polyphenol compounds, amino acids, pectin substances, proteins, lipids) in freezing and storing the raw; there were elucidated the main consequences of phase transformations in freezing and thawing fruit and vegetable raw with the methods of differential scanning microcalorimetry and thermography; there was established the level of activity changes in oxydases of fruit and vegetables depending on their refrigerated storage conditions; there were shown the main kind features that stipulate the fruit and vegetables' expedience for industrial freezing; there were developed and industrially approved the technologies of producing the fresh-frozen fruit and vegetable raw with a usage of cryoprotectors.
