A research object is existent technologies of catching and secreting of aromatizers at the concentration of juices and extracts. The article of research is adsorbtion-desorbtion properties of adsorbents. The novelty of work is the use of combination of properties of different adsorbents in certain conformity to law with achievement of the complete catching and secreting of aromatizers of juices and extracts; theoretical ground and practical working of the modes of leadthrough of adsorbtion of aromatizers from steams of juices and extracts on a column with a gradient change selectivity and desorbtion them under the action of the teplodinamic field. The gas chromatographic qualitative and quantitative analysis of basic, juices, extracts, also it concentrates and aromatic compounds has been investigated. The elements of gas chromatograph is the part of laboratory-scale; its function is to get true information of adsorbtion-desorbtion properties of adsorbents and development models of gradient selectivity column. The developed method allows to get the concentrates of aromatizers as a natural flavour or as aromatic part of the juices or extracts. One of basic terms of realization of project is technological availability for the use on the modern enterprises of food industry and in small production.
