Subject of study: production of food protein complex from raw sunflower kernel by bumping and hexane extraction. Purpose of study: study of structural changes principles for cells of the kernel under the influence of temperature, pressure depending on humidity, definition of optimal level of quantity for maximal disengagement of oil by bumping of kernel and oil extraction from derived petal, that enables to develop the machines and to create the new technological lines for oil and protein product manufacture from kernel, which have a minor energy and steel intensity in comparison with morally aged technologies, that used in world practice. Methods of study: physicochemical and organoleptic quality characteristics of processing product of oil-bearing seeds have been determined at standard methods, mathematical methods assisted of programmed packet MathCAD and Microsoft Excel have been used for planning of experiments and processing of data. Theoretical and practical results, novelty: existent representation about structure and behavior of kernel cells has been studied in present work, preparation conditions of sunflower kernel (water content, pressure, duration, temperature of bumping and kernel height) for direct extraction by bumping has been determined. Kinetics of oil extraction in series from bumped kernel of cover-free sunflower seed by organic solvent (hexane), about the influence of bumped kernel thickness, about duty of solvent and quantity of series on complete the extraction are studied. The mathematical models of cover-free sunflower seed bumping and enzymatic proteins modification of food fat-free sunflower kernel have been developed. Changes, that happen in kernel during processing to protein products and oil, are researched. Processing technology of crude sunflower kernel, which grounded on principle of the protein substances storage of feed stock is suggested. Introduction efficiency: at the expense of protein substances storage under processing of raw sunflower seed kernel not only oil production but also protein food fat-free kernel by simplified, less energy-charged, competitive technology are possible, which allows to create new raw material base for obtaining food proteins and new food products.
