The object of the study are incomplete acylglycerols for obtain symmetric acylglycerols with use of ethyl esters of fatty acids. The project aims are to identify the basic laws of alcoholysis of monohydric alcohols esters, as the method of modifying fat with the help of specific lipolytic enzyme preparations. Chemical and physicochemical methods are used in the research. The results of research: identified the main regularities of the enzymatic modification of fats with ethyl esters of fatty acids under the influence of lipolytic enzymes, which will enable to identify new ways of development of technology for special-purpose fats. The novelty of the work is confirmed by the lack of data on the enzymatic alcoholysis of esters of polyhydric alcohols with incomplete acylglycerols. Projections, assumptions regarding the development of the research object - enzyme technology provides energy savings, reduces losses of raw materials, increases yield of target products, their quality, determine the technological processes environmental safety and allow to build flexible circuit manufacturing process.
