At present, methods of processing plant material are such that the biologically active substances of raw materials can be almost completely destroyed. Known methods for obtaining natural flavors are evaporation and extraction. But the alcohol extract improving slightly by forming a scent, did not significantly affect the increase in biological value and flavor indices of finished products. By steam distillation or evaporation a limited number of fragrances, which consist mainly of essential oils is produced. Therefore, issues of efficient method of extracting the aromatic substances remains relevant. During the vacuum drying they may be in liquid form, and then transferred to a dry media - to concentrate. In order to prove the effectiveness of the vacuum removal of aromatics the number of aromatic substances in the samples dried in different ways were compared. We have developed a concentrated vegetable drink of carrots, pumpkins, beets, flavored nuts, currants, pepper. It was proved that the pumpkin, beets and carrots are the best features to create a powdery product.
