Comparative evaluation of chemical composition of triticale grain of the last 5 years yield taking into account peculiarities of the variety and climate conditions was carried out. The system for defining antinutritious substances - alkilrezorcinoles - in triticale grain was developed, improved and examined in "Ukrmetrteststandard". Certificate MBB № 081/12-0513-08. About 200 tests on antinutritious substances content - in alkilrezorcinoles in triticale, wheat and rye grain grown during 5 years were carried out. The antinutritious substances may be accumulated in triticale grain in the amount of 168-416,2 mg/kg, in wheat grain - 89 - 140 mg/kg, in rye grain - 310 - 536,3 mg/kg. Laboratory experiments on methods of neutralization of antinutritious substances in triticale grain were carried out. Effect of various temperatures on alkilrezorcinoles decomposition (560C - 1200C during 30 -120 min) was studied. The results showed that under mentioned above conditions the contents of alkilresorcinoles in triticale grain did not change. Triticale and rye grain which had alkilresorcinole content at the level of 416,2 mg/kg and 536,3 mg/kg were undergone to wet thermal treatment (moisture content 20%, temperature 650C during 30 - 120 min and 1200C during 30 - 120 min). the results showed that treatment during 30 min and 60 min under the temperature 650C decreased alkilresorcinoles only on 0,8 - 13,0%. Method of germination of triticale grain up to 4 mm of sprouts decreases the content of antinutricious substances on 21%. Grinding triticale grains and passing them through 3 mm sleve allows to reduce alkilresorcinoles content on 12,7%. Effect of buffer solution containing Proteaza C ferment on triticale grain allows to reduce alkilresorcinoles content on 36%. Combination of grinding and buffer solution effect reduces alkilresorcinoles content on 49,4%.
