The effects of the energy, design and operation factors of the technological processes on the quality indices of grapes, grape crush, grape must and wine materials with a view to specify and optimize their numerical values were studied. The results obtained were subject to mathematical processing with the use of correlation and regression analyses. Regression equations were obtained describing the dependencies of the physico-chemical characteristics of grape crush, grape must and wine materials upon different factors during the technological processes of grape processing, grape must preparation and clarification by suspended matter flotation, cold treatment of wine materials for crystal cloud stability, preparation of sulfide dioxide stock solution and grape crush sulfitation. The initial requirements for the development and use of new technological equipment were elaborated with refer to the following machines: the roller stemmer-crusher ВГД-20; the set of grape processing equipment КФО-1 for farm enterprises; the installation УКВ-6 enabling a shortened technological cycle of stable wine production; the flotation installation ВФУ-3 for grape must clarification with a capacity of 3 m3/h; the installation УПСМ - 32/125 for continuous sulfur dioxide treatment of grape must, crush and wine materials.
