The aim of the work - grounding and determination of the carotene - containing oils - mixes and products on their basis. Methods and equipment : Fractional content for lipids has been determined by GLC. The oxidation ratio of carotene has been measured spectrophotometrically. Fatty acids have been determined by GLC by "Shimadzu GC-14B". UV - spectra of absorbance have been determined by СФ-46 and "Specord Uv-Vis". The tocopherol determination has been made by the spectraphotometer СФ-46 . The metal presence determination has been made dy the technique of roentgen-fluorescent spectroscopy by spectrometer "СПРУТ".Work has resulted in the scientific grounding and determination of new natural antioxidants usage to stabilize the carotene and amaranth ,and the possibility to apply them as well.
