The subject of the researches is electro hydraulic procession in the opened and locked systems. The purpose of the project was to work out a method that will help intensify the warm and mass exchanges processes in food production. This method is based on using a portative electro hydraulic device. The finished work resulted in researched influence of electro hydraulic effect on raw hop and milk whey which were processed on the portative electro hydraulic device. There are also given some proposals to use the method of electro hydraulic procession in the technological schemes of producing the hop extracts, whey drinks, sugar, water-and-lime suspension. One of these proposals is intensification of extraction, disintegration, plasmolysis, and activation processes. The main results of industrial testing the portative electro hydraulic device on "Palmira-Tsukor" OJSC approved the workability and continuous action of the device in different regimes of discharges' voltage and quantity in such environments as juice-and-chop mixture and water-and-lime suspension. The conducted economical calculations showed the expedience of using the electro hydraulic device in the technological scheme of lime department to activate water-and-lime suspension.
