The aim of the investigations: increasing of the fermental production quality and energy conservation at the expense of using the way of detained fermentation. The investigated fermental production preserves high gustatory qualities up to 6 months of keeping at 00 …+20 C, and for the further keeping up to 1 year pickles of water-melon and tomato are suitable. These samples had high marks as to organo-leptical indices after 1 year of storing, while standard production was unfit for usage.
