The aim of the work: new varieties and hybrids of vegetable and melon cultures test on their suitableness for processing and using them fresh, defining the most valuable as to the quality of different using in industrial processing, establishing of interconnections between indices of raw material and qualitative signs of ready-made products, prepared from the vegetable raw material. The methods of investigations: laboratory. The technological suitableness of varieties and hybrids for processing was established on the basis of chemical, morphological, physics and mechanical, organoleptical analyses of raw material, experimental preserving, salting, organoleptical estimation of experimental samples of processed production and their chemical analysis after finishing the term of storing. On the basis of the bindings, the most technological varieties and hybrids of vegetables (cucumber, tomatoes, sweet pepper, white late-ripen cabbage, red cabbage) have been defined, which mostly suited for preparing one or two concrete kinds of production or using fresh, for their introduction into manufacturing with the aim of quality and competing ability raising. With the help of method of regressive analysis some comparisons of dependence of some parameters of ready production with the indications of fresh fruits of experimental varieties and hybrids of vegetable plants of selections IVB SAASU (cucumber, tomatoes, sweet pepper, white cabbage, late-ripen) were built. The structure of ways coefficients of correlation ties between raw material signs and ready product, which had been processed, was defined. The results of the investigations are used while creating new varieties and hybrids: cucumber - "Suvenir F1", "Anet F1", sweet pepper "Valyusha", tomato "Zolotyi potok", "Eleonora", "Sheval'e F1". They are recommended to the processing enterprises, selectionists, producers of agricultural production.
