Purpose of research - to define fruit availability to long-term storing and processing. Research method - laboratory. It was defined that climatic year conditions effected apples storing potential realization much more than pomologic and stock sorts peculiarirues; 8 sorts available for long-term storing have been distinquished; it was showed that 10 selected swett cherry forms, 9 for cherry, 2 for apricot and 1 for cherry plum (alycha) are available for making high quality stewed fruits, juices and suaces for diet and baby food catering.
