A comparative analysis of the results of the determination of micronutrient content of milk and dairy produce of the contemporary Ukrainian market with the correspondent data from the previous reference books on the foodstuffs' chemical composition of 1987 and 2002 was performed. A clear tendency to a decrease of the content of calcium and potassium in Ukrainian milk and dairy produce was determined. It was established that a content of magnesium and sodium was a bit more than reference books' ones.
