The purpose of the work to investigate solubilization of sunflower-seed oil by gelatin solutions and it's influence upon optical and rheological properties of gelatin solutions. It was determined that sunflower-seed oil can be solubilized by solutions Tween 80 and gelatin also conditions of carrying out the solubilization and volume of solubilized fat. The surface-tensions on the bound water air, oil air, water oil were measured also works of cohesion and adhesion were calculated at their mutual doping. The influence of solubilization of oil on intermolecular interactions was investigated by measuring of viscosity of gelatin solutions. Activation energy of viscosity current of gelatin solutions with solubilized oil was calculated. An influence of solubilized oil and oil, enriched by carotenoids on supramolecular gelatin's solution structure was investigated. Size and concentration of undermolecular particles or supramoleculs in investigated gelatin's solutions were calculated by method of spectrum of turbidity. It was proved to carry out solubilization of oil by gelatin's solutions under it's direct addition don't increase firmness of the gel compare with etalon.
