There was conducted mathematical modeling of change process of physical and chemical indexes of blends of vegetable oils during the 24 month storage and mathematical prognostication of organoleptic indexes of quality of experimental samples of mayonnaise. There are elaborated recipes of mayonnaise sauces "Osobliviy - 67 " and " Korisniy-45". There was conducted the merchandizing expertise of organoleptic, physical and chemical indexes of quality and safety of experimental samples of mayonnaise sauces. There is developed the project of regulatory - technological documentation from production of mayonnaise sauces.
