For calculations and treatment of results the program GROMACS was used. Configuration of molecule of saccharose was received with the use of the program PRODRG and adapted for the using by the program GROMACS. Structure of the automated system of registration of echo signal of NMR spectrometer was proposed for research of food products. The algorithm of application software was developed taking into account the specific of research process. The considered theoretical posit|rule|ions of the offered method and experimental approbation testify to possibility of its application for research of molecular mobility in liquid environments. Influence of row of technological factors and different additions was studied on gelation properties of polysaccharides of red algae. Received information testify that it is possible to manage the process of gelation. The problem of diminishing of charges of gelation agents partly can be decided promoting gel ability of polysaccharides by introduction to compounding mixture of different additions. The process of drying with mixed heat transfer was considered as an evolution of the system through the row of the possible transient quasistationary states. Dehydration of humid objects was explored by the method of thermodynamics potentials, method of nuclear magnetic and paramagnetic resonances. A method and equipment for hydrothermic processing of groats was developed.
