Beside this, there were considered problems of accumulation of toxic matters in food products; chemical structure, toxicological assessment of mycotoxins; there was analysed the content of mycotoxins in vegetable raw material and ways of its reduction. The content of patulin was determined with the help of TLC. First researches on the content patulin were conducted after gathering of vegetable harvest, then vegetables were put in storage and during 3 months they were researched on the content of mycotoxins. With the help of mathematical methods there was predicted the dynamics of accumulation of patulin in fresh vegetables during storage, which is presented in kind of equations - polynominal lines of trend.
