The object of researches: fresh vegetables, including fresh sorrel, which is stored up and realized for using and for industrial processing. The aim of, the working out of standard is improving of quality of fresh vegetables, insuring of production safety for man's life and health and environ mental protection, and also protection of consumers' right. It can be reached by the way of careful preparation of vegetables for realization, purifying, sorting, calibrating and packing of vegetables into different kinds of package and their marking. Everybody knows that package influences greatly on the competitive ability of vegetables. Modern package fulfils the flouring functions: it protects vegetables, carries the information about producer and quality, satisfies the principle of ecology; is the instrument of marketing; makes transportation easier. In the basis of the standard for technical conditions of fresh sorrel the results of research investigations on the growing technology, storing and processing of fresh vegetables are put down. The quality indices, which have been established in the national standard, will promote the getting of high - qualitative vegetable production and will serve as a basis for objective pricing while introducing new varieties. The standard, which has been worked out, is connected with the present normative documents is to the environmental protection, safety of work during sorting, packing, transportation, keeping and also with the documents for commodity equipment, etc. The novelty of investigation: In the standard, which been worked out for sorrel, fresh the division of production is for seen into two sorts- the first and the second, the terms and methods of samples selecting are used according to SST.U ISO 874-02, the demands on safety and environment protection are given, the demands as to the production storage are brought into conformity with the requirements of international standards, and also they meet the modern requirements of consumers and state system of standardization. The standard, after coming into force, will be used in economies of Ukraine, of different forms of property, which are engaged in production, storage and realization of fresh vegetable production.
