The aim of the work: to create for the first time the standard for fresh vegetables, which may be used for children's feeding from the six-months old age up to 3 years old in fresh, processed state and for culinary treatment, regulate organoleptical, chemical and safety indications, demands to soils and technologies of their growing on the basis of long-term chemical-technological researches of newly-created varieties and hybrids of vegetables. The criteria of vegetables safety were assumed as a basis, which were worked out by the ministry of health protection of Ukraine as to the content of conterminously possible levels of potentially harmful substances for health of biological and chemical origins. The standard for vegetables fresh is intended for children's nourishment, regulating quality, at the same time will influence the manufacturing of vegetable production in ecologically safe zones with the application of scientifically-grounded system of fertilizers, biological ways of plants protection from pests and diseases, optimum conditions of storage. The standard consists of 13 chapters: the sphere of application, normative references, terms and definitions of concepts, classifications, technical demands, safety demands, environmental protection demands, marking, packing, transport and keeping, control methods, rules of reception, guarantees of a suplllier.
