Food plays the leading role in solving this problem. High-grade, high-quality food in the first place creates quality of humans' life. The body gets from food all essential nutrients necessary for physiological needs. Lack or excess of certain essential substances in the diet negatively affects human health. The aim of this research is to develop science-based mathematical models that allow creating wide assortment of food products and health care dishes which eliminate the shortage of essential food factors in the diets of modern Ukrainian. The topicality was scientifically grounded and methodical approaches to modeling the recipe composition of foods and dishes with health-improving and healthcare properties were developed. The mathematical models of creating mineral enrichments were elaborated. On the basis of obtained models protein-mineral calcium and iodine containing additives from animal origin raw material with strictly stable content of mineral components were developed. It allows more precise regulation of the mineral composition of the final product to meet the needs of target consumers (age, sex, physiological state). In addition, for the reporting period more than 30 mathematical models of ingredients content optimization in diets of health-improving consumption (DHC) were proposed and on their basis the respective number of theoretical diets of health-improving consumption was created.
