The purpose of work - Create a tracking system of critical control points in the manufacturing technology and storage of agricultural raw materials and feed, which can vary the quality and safety of products. Methods of research - Chromatographic and spectrophotometric methods, statistical analysis of normative data and results. Results of the carried out researches - Analyzed species composition, frequency of detection and quantitative content of mycotoxins in agricultural products. Determined the percentage of forage and grain, representing a potential risk to the health of animals and humans. Identified key critical control point of temperature and relative humidity, is significantly increased when the quantitative increase aflatoxins and ochratoxin A for storage of grain cereals. We recommend identification and risk evaluation in the presence of mycotoxins in grain raw track at critical control points and take appropriate measures to prevent pollution at the stages of growing, harvesting, transportation and storage. The scientific and practical recommendations are prepared results according to research "Identification of critical control points in the process of manufacture and storage of grain raw material to prevent its lesion by mycotoxins".
