The object of the investigation was selected the state of moral and physical wear of refrigerators of industries in Agro Industrial Complex of Ukraine. The purpose of the research is creation of strategy of optimum development of refrigeration economy for food supplies keeping according to the requirements of FAO and state legislation. The analysis of international and domestic documentation and results of refrigeration economy inspections of Ukraine is executed. The link is set out between the data in general structure and the characteristics of it's separate objects. The main provisions of optimal food supplies' storage structure creation are set on the basis of introduction of methodology of the energy-technological monitoring and certification of objects of refrigeration economy. The register of optimum variants of refrigeration technologies and project decisions is offered for the basic groups of food products. The patents for warmth-inertial package, allowing to decrease the products' losses and energy consumption are received on the basis of researches. The research results introduction will allow: - to increase the capacity of APK food storage system from 3,63 million tons to the necessary level of 6.065 millions tons at the unchanging level of energy consumption; - to decrease latent energy losses, which arise in connection with the production of goods which is annually lost because of storage in impermissible requirements; - to stimulate development of refrigeration industry and other industries of Ukraine. 2. The approximate and generalized mathematical model is developed of biochemical reactions, running simultaneously with the processes of evaporation from the surface of raw material of animal and vegetable origin at its refrigeration treatment and storage. The approbation of mathematical model is conducted on the example of breathing, evaporation and mass' losses processes. Technical and technological recommendations are developed from realization of energy-resources saving technologies of raw food material storage with the maximal maintenance of their mass storage indexes and food value.
