Theoretical and practical results, novelty: key parameters of ethanol extraction of a crude sunflower seeds kernel are defined and creation possibility of effective technology of reception of a protein concentrate of the raised quality, and also its use as a part of foodstuff is proved. It is proved that food meal can replace completely an egg powder in a compounding mayonnaise, and also enrich with protein of bakery products. Efficiency of introduction: on the basis of the received results begins possible to develop of rational technology of sunflower seeds processing and reception not only oil, but also protein products.
