Culinary traditions of Slobozhanschyna are examined as a factor of successful development of tourism in the region. Important strategic direction of tourism development is organic connection of culinary traditions and innovations in the organization of catering and development of the forms of their integration in tourist business. Statistical, economic-mathematical methods, as well as questionnaires and interviewing of leaders of tourist enterprises, are used. Methodical recommendations are worked out on the formation of culinary tours. The inculcated recommendations are directed towards the increase of the efficiency of tourist clusters' functioning.
