The technological parameters of obtaining EAGN under the mild conditions by means of sunflower oil interesterification in the binary system of organic solvents are grounded and the fundamental technological scheme of their production is suggested. The physicochemical, colloid-chemical and functionally-technological properties of the obtained emulsifiers are determined and the suitability and availability of their using in the technologies of MFES are experimentally proved. The mechanisms of formation of stable meet emulsions with EAGN, functionally-technological properties and structurally-mechanical factors of meat foods with EAGN are studied. The innovative strategy is scientifically based and the technologies of meat foods of emulsive structure, fabricated with the use of EAGN, are developed. The main quality levels of MFES with EAGN and of the products on the basis of them and also the socio-economic effect of adoption of new production are determined.
