Subjects of research: the risks of danger of plant material and its processing products of prolong storage, methods and methodology of their determination. Purpose of work: development of scientific bases of quality and safety of plant products in accordance with the principles of HACCP-based analysis and an integrated study of risks, as well as the scientific basis of research methodology, taking into account the peculiarities of Ukrainian region. Methods of researches: biochemical, biological, microbiological, spectrophotometric, electrometric. Apparatus: spectrophotometer, microscope, potentiometer, microbiological analyzer. The scientific basis for determining risk of plant products through the integrated study of risk factors, developed methods of analysis in the light of modern conditions, HACCP and Ukrainian features of the region have been elaborated. Classification of products and analytical monitoring of food product risk factors is conducted on the basis of existing regulatory and technical documents; the risks of danger of vegetable raw material and products of its processing are experimentally established, an analysis and ranking estimation of separate groups and types of risks is conducted in forming of quality and safety of products. The indication of the elaborate methods of risk researches is experimentally tested to the criterion indexes.Once mathematical dependence of influence of toxicants is studed by the results of biotesting on subcellular and organism levels, the toxicometrical estimation of action of model toxicans is conducted. Identified a specific group of new biological contaminants - microbial genus Alicyclobacillus. Monitoring of chemical and biological risk factors is conducted by the traditional and developed by us methods of integral biotesting on regions and on the types of vegetable raw material in Ukraine, modern methodology, charts of research of danger risks and CCP in accordance principles of HACCP was developed.
